Composition and microbiological quality of raw milk refrigerated in community tanks

Milk is rich in nutrients, but several factors the production system interfere with its quality. The objective of this study was to analyze composition and microbiological quality raw milk stored community tanks from municipality Aricanduva – Minas Gerais. Samples were collected eight at different properties. temperature analyzed using digital analyzer. total count aerobic mesophilic microorganisms performed Laboratory Science Technology Products Animal Origin, Department Science, Federal University Vales do Jequitinhonha Mucuri, Diamantina data obtained compared values established by Normative Instruction (IN) n° 76, means Student's t-test Wilcoxon's non-parametric test level 5% significance. average levels fat (3.55 g/100g), protein (3.00 lactose (4.45 g/100g) solids (11.76 within standards minimum required. content defatted (8.21 limiting factor compliance IN76, an value lower than that (8.40 g/100g). higher standard required legislation did not differ legislation. It concluded Gerais, IN fully met all evaluated parameters.
